Spicy Miso Crab Carbonara

While scrolling through Chrissy Teigen’s Instagram Stories, I came across a quick pasta that had my stomach growling instantly. Though I’ve never been a fan of carbonara, the miso paste with chili garlic sauce piqued my attention.

In the COVID spirit of use-what-you-have, my mind blended her Spicy Miso Carbonara recipe with Bestia’s uni pasta (the stuff of food porn dreams). I neither had bacon or uni in my fridge, but I did have some leftover crab meat and Dungeness crab with loads of briny back fat.

With all credit to Chrissy Teigen, here’s my take on a super umami comfort overload pasta recipe:

Vietnamese Style Grilled Clams with Basil – Nghêu Xào Lá Quế

I stumbled across a recipe for linguine with clams in In Style magazine, of all places, and had to make it for supper. While shopping for game night supplies, I picked up a bag of clams for dinner later in the week. There were too many clams for dinner for two, so I decided to make a little appetizer of grilled clams – Vietnamese style.

Turns out that this is another recipe that requires ingredients that are most likely already in your pantry or fridge. These grilled clams are perfect for a barbecue, Sunday Football or game night at home. All you need is to chop some fresh herbs and top the grilled clams with a few other staples.

Nghêu Xào Lá Quế – Clams with Basil

  • Clams – larger are better, but we used cherrystones we had on hand for dinner
  • Fried Crispy Shallots
  • Nuoc Mam
  • Scallion Oil
  • Fresh Thai Basil – chopped
  • Peanuts (optional)

While you’re soaking the clams, make scallion oil. Pour oil in a small sauce pan and heat over medium low heat. Chop a few scallions – white and green parts – and drop them in the hot oil. Stir briefly until the onions just begin to cook and then take off the stove to cool completely. You’ll want to drizzle this scallion oil on vegetables, grilled meats and fish. It adds a ton of flavor to any dish.

Grill the clams until they open and remove the top shell, arranging on a platter.

Top the clams with fresh chopped basil and peanuts and then drizzle some nuoc mam, scallion oil, and crispy shallot.

That’s all it takes! Try them this weekend!

Oh, and here’s the main course of pasta with clams, arugula and fresh basil that was OH so delicious. I will be making this many, many times over. Instead of linguine I used bucatini, which is a spaghetti-like pasta that is actually a long, hollow tube. This is perfect for the clam sauce as it gets sucked up the middle and you get even more flavor from the delicious, briny broth. I also slow roasted heirloom cherry tomatoes and added to the broth just before serving – a perfect flavor boost.

Hearty Bolognase – Easy Italian Comfort Food

Sooo, this isn’t Vietnamese. But everyone loves a big, steaming bowl of hearty, meaty pasta, right? We had leftovers for lunch today so I needed a change of pace. As much as I love the freshness and healthy qualities of Vietnamese food, I still crave good old-fashioned carbs from time to time.

One of Thuan’s guilty pleasures is Pizza Hut Tuscani Meaty Marinara pasta. One of my guilty pleasures is to make those dishes at home even better so he forgets about them. Bring on the Bolognase.

Quick and Hearty Bolognase

This recipe would easily serve 6 or even 8. For us, we made two bowls + two lunch portions and two two-serving freezer packs. Get it? Start to finish the meal took 45 minutes.

1 package ground Veal, Pork and Beef mixture (ours was about 1.22 pounds)

1 small red onion diced

2 carrots grated

4 cloves garlic

6 halves sun dried tomatoes diced

Worcestershire Sauce (10 good shakes)

1 cup red wine

1 small can tomato paste

1 large can San Marzano whole tomatoes (this one has basil, but any whole canned tomatoes will do)

Italian seasonings – oregano, parsley, basil, bay leaf to taste

1 tbs or so Fish Sauce

Salt & Pepper to taste

I lost my grater in the move, so took a peeler to two carrots and then chopped in to smaller pieces. See what fun this can be?
