Family Supper Fish Rolls

Like a fish fry, a big grilled fish, tons of veggies and herbs with rice paper rolls is a great way to spend a family Sunday. So fresh, so satisfying, so HEALTHY. Have I mentioned that Vietnamese cooking is healthy? You can eat everything and not feel guilty about it.

Mom and Dad made a run down to the house to give us a poker table Pap Pap (my dad’s dad) made by hand years and years ago. It was pretty cool to hear stories of nickle, dime, quarter poker games being held at my Dad’s childhood home with local police and other folks. He said the cops always took off their guns and left them on the pool table. Safety first, you know.

Anyways. I wanted to make something that they would enjoy but would also fit with Mom’s diet as she’s counting down to fabulous for our wedding day.

Bánh tráng cuốn cá, Rice Paper Rolls with Fish, was a perfect choice. The only ‘cooking’ required is to toss the fish on the grill. My parents aren’t quite sure about fish sauce just yet, so I wanted to fragrance the fish in case they ate the rolls plain and stuffed the fish with a lemongrass stalk and a few slices of lime. This is totally optional.

Fresh and Hearty Pork and Veggie Vermicelli Bowls

Inauguration Day and MLK Day = no work and policy nerd candyland. Although not braving the crowds and cold, I was up early  (not “early” as defined by the throngs who flicked to the Mall, but “early” as in day off early) and tuned in to Morning Joe at the Dubliner. Getting my politics on in the living room, I made coffee, cinnamon buns and eggs before settling in to camp for the Inaugural festivities. Did I mention the Bloody Mary? I didn’t have any OJ and didn’t feel like drinking straight Champagne on a Monday morning.

Thuan finally came down after Obama was sworn in, Kelly Clarkson mangled an American classic, and Biden ogled Beyonce, so we got the day started with dim sum near home. After a heavy dose of shrimp and MSG, dinner needed to be fresh and healthy. Bring on the Grilled Pork and Vermicelli (Bun Thit Nuong). Speaking of the inauguration today, though, did you see the Inaugural Luncheon menu? I’d love to try a few of these dishes. That dessert sounds ah-mazing. Who wouldn’t love apple pie, maple caramel sauce AND cheese?

Now we haven’t made the 37th trip to Home Depot for grilling goods, so it wasn’t grilled pork but was damn good all the same. Thanks to Super H’s pre-sliced pork butt, this is a super simple meal that packs tons of flavor and healthy veggies.
